This salad is crunchy, salty, aromatic, and fresh. The combination of fresh vegetables with a simple dressing could not be more delicious.

Ingredients

Salad

  • 3-4 medium tomatoes, cut into wedges or bite size pieces

  • ¼ red onion, thinly sliced

  • 1 cucumber, sliced into thick half-moons

  • ½ green pepper, cut into bite sized pieces

  • 4oz feta cheese, cut or crumbled

  • 12-16 kalamata olives

Dressing

  • 3 Tbsp extra virgin olive oil

  • 1 1/2 Tbsp lemon juice

  • 1 clove garlic, minced

  • 1/2 tsp dried oregano

  • 1/4 tsp salt

  • 1/4 tsp freshly ground pepper


Directions

Salad

  1. In a medium sized bowl, combine the tomatoes, red onion, cucumber, green pepper, olives, and feta cheese. Toss to combine.

Dressing

  1. In a small airtight container, combine the olive oil, lemon juice, garlic, oregano, salt, and pepper. Seal the container and shake vigorously. (The olive oil will separate from the rest of the dressing, so you may have to repeat this before use.)

  2. Pour dressing over salad and toss to combine.
