Poppy Seed Loaf

Yield: 1 large loaf/2 small loaves
Prep: 15 minutes | Cook Time: 1 hours | Inactive Time: 30 minutes
Ingredients
1 box of cake mix, yellow or white
4 eggs
1 cup water
½ cup vegetable oil
½ cup instant pudding, vanilla or lemon
3 Tbsp poppy seeds
Directions
In a small bowl, soak the poppy seeds in hot water for 30 minutes - 1 hour.
In the meantime, preheat the oven to 350F and grease 1-2 loaf pans thoroughly.
Drain soaked poppy seeds.
In a large mixing bowl, combine the cake mix, eggs, water, oil, instant pudding, and poppy seeds until well combined, but do not over-mix.
Pour the mixture evenly into the pre-greased loaf pans.
Bake for 1 hour or until a toothpick comes out clean.
Remove from the pan and place on a cooling rack.

Notes
Soaking the poppy seeds in advance is essential for a moist loaf.
