Poppy Seed Loaf

Nobody likes the word moist, but this loaf right here is just that!

Yield: 1 large loaf/2 small loaves

Prep: 15 minutes | Cook Time: 1 hours | Inactive Time: 30 minutes



Ingredients

  • 1 box of cake mix, yellow or white

  • 4 eggs

  • 1 cup water

  • ½ cup vegetable oil

  • ½ cup instant pudding, vanilla or lemon

  • 3 Tbsp poppy seeds


Directions

  1. In a small bowl, soak the poppy seeds in hot water for 30 minutes - 1 hour.

  2. In the meantime, preheat the oven to 350F and grease 1-2 loaf pans thoroughly.

  3. Drain soaked poppy seeds.

  4. In a large mixing bowl, combine the cake mix, eggs, water, oil, instant pudding, and poppy seeds until well combined, but do not over-mix.

  5. Pour the mixture evenly into the pre-greased loaf pans.

  6. Bake for 1 hour or until a toothpick comes out clean.

  7. Remove from the pan and place on a cooling rack.

Notes

  1. Soaking the poppy seeds in advance is essential for a moist loaf.
